Dinner for Two


Dinner for Two

This is a good meal for a cold winter day.

Menu:

Two bean soup with cornbread:

Two bean soup:

1- lbs. dry pinto beans
1- lbs. dry navy beans
1 large onion
2- 11.5 oz cans of V8
2 1/2 lb- smoked ham hocks (4)

Put this stuff in a large pot, give it plenty of water, cook till done, salt to taste.

Cornbread:

1 cup cornmeal
1 cup flour
3 tsp baking power
1/2 tsp salt
1 egg
1 cup buttermilk
4 tbs raw sugar

Mix this stuff up and bake in a butter greased 8" pan at 425 deg for 25 min.

This will give you plenty for several meals.

I cheated on the buttermilk by using instant powder.

I would make but Dan-o always says yucko, then I have to sulk. It's just too much work.

I certainly know about sulking. The Babe sulks when I put rotel tomatoes into the two bean soup.
